Who Knew?
About a week ago Misa and I decided to go low-carb in addition to our exercise routine.
So far it hasn't been TOO bad.
Today for dinner we made fried tomatoes, fried eggplant, artichoke (which we forgot to eat) and chicken stuffed with broccoli and spinach.
It was all YUMMY! but my favorite part was the fried tomatoes. Those were so so so so GOOD!
And super easy to make.
The "breading" is Parmesan cheese, salt, pepper, and garlic powder. You can flavor it up any way you want, I'm sure, but it was perfect that way.
Dinner today made our lifestyle change not seem so bad. :) (I don't want to say diet cuz I don't intend on going back. I'll miss bread but I know as soon as I start eating the way I used to I'll gain every bit of weight I've lost right back).
Oh, and dessert is mini-cheesecake. Mmmm...... I can't wait!
I'm so glad I live with Betty Crocker!
